Roasted Carrots

Ingredients:

Rainbow carrots with the stems

@chevoolife GoatCheese cubes in chili & lemon olive oil

Recipe:

Wash & dry carrots and carrot greens.

Remove greens from carrots and place aside

Place carrots into a baking dish. Drizzle oil from @chevoolife jar and toss carrots with salt and pepper

Bake 400 degrees for 30 minutes

In a small saucepan on dry heat, add 1/4 cups of pine nuts and constantly stir until toasted. Set aside

Place about 2 cups of carrot top greens into the food processor with 2-3 cloves of garlic, salt & pepper, 2 TBSP toasted pinenuts .

Drizzle in chili-lemon oil from the goat cheese jar into blender to soften and add texture to pesto - set aside

Rinse the food processor and add goat cheese to the processor to purée. Drizzle in small amounts of the oil for a creamy texture


Plating:

Spread creamy goat cheese onto the serving dish.

Top with carrots. Garnish with carrot top pesto and toasted pine nuts to taste.

Serve & Enjoy

Pair this meal with some roasted chicken and quinoa for a complete meal
